Khattay Aloo:-
Ingredients:
▪︎Potatoes ……….. 7 medium sized (cube cut & boiled)
(Alu)
▪︎Oil…….1 tbsp
(Tail)
▪︎Garlic paste……..1 tbsp
(Lehsun ka paste)
▪︎Tamarind pulp……. 3/4 cup
(Imli ka guda)
▪︎Salt…………1/2 tsp + 1/2 tsp
(Namak)
▪︎Coriander seeds……1 tbsp  (Roasted & crushed)
(Sabut dhania)
▪︎Cumin seeds……1 tsp  (Roasted & crushed)
(Zeera)
▪︎Chaat masala ……….1 tsp
▪︎Red chilli powder ………. 1/2 tsp
(Pissa lal mirch)
▪︎Red chilli flakes………. 1 tsp
(Kuti lal mirch)
▪︎Turmeric powder…….1/2 tsp
(Pissi haldi)
▪︎Brown sugar………2 tbsp
(Shakar)
▪︎Water ……… 1/4 cup
(Pani)
▪︎Fresh coriander as required (Chopped)
(Hara dhania)
▪︎Mint leaves as required  (Chopped)
(Podina)
▪︎Orange food color…….1/2 tsp
(Malta rung)

Direction:-
▪︎Firstly peel of the potatoes and cut in cubes.
▪︎Add the salt, orange color & potato cubes in boiling water and boil for 7 – 8 mins until potato tender & strain them.
▪︎In a pan, add oil and garlic paste & fry it.
▪︎Add tamarind pulp, salt, chaat masala, cumin seeds, coriander seeds, red chilli powder, red chilli flakes, turmeric powder, brown sugar , water & cook for 2 – 3 mins.
▪︎Add boiled potatoes & mix until well combined.
▪︎Sprinkle fresh coriander and mints leaves.
