Gur Ki Panjiri:-
Ingredients:
▪Semolina…………2 cups
(Sooji)
▪Desi Ghee……….2 cups
▪ Melon seeds………….1/2 cup
(Chaar maghaz)
▪Almond………………2 cups
(Badam)
▪Walnuts………………1 cup
(Akhrot)
▪Pistachio nuts ……………….1 cup
(Pista)
▪Peanuts ……………….1 cup
(Mong phalli)
▪︎Poppy seeds……2 tbsp
(Khaskhas)
▪Edible gum crystals………1 cup
(Gondh)
▪Flame -of -the-forest …………2 tbsp
(Kamarkas)
▪Puffed lotus seeds/ Fox nuts………4 cups
(Makhane)
▪Green cardamom powder………….1 tsp
(Pissi sabz elaichi)
▪Dried ginger powder……………2 tsp
(Saunth)
▪Raisins……………………2 cups
(Kishmish)
▪Cashew nuts……………..2 cups
(Kaju)
▪Coconut slices…………………2 cups
(Kopra)
▪︎Jaggery powder……….. 2 cups
(Gur)

Direction:-
▪︎In wok, add almonds, cashew nuts, walnuts, pistachios, peanuts and fry for 2 – 3 minutes.
▪︎Add dried melon seeds and fry for 1 – 2 minutes and set aside & coarsely grind the nuts.
▪︎Add puffed lotus seeds,fry until light brown & crispy and set aside.
▪︎Add coconut slices, raisins and fry for 2 – 3 mins & set aside and place it separately bowl.
▪︎Add 1/2 cup desi ghee, add edible gum crystals,fry until puffed up (double in size) and set aside & grind it.
▪︎Add 1 & 1/2 cup of desi ghee and semolina, continuously mix on low to medium flame till color turns golden brown and aroma occurs.
Add green cardamom powder, poppy seeds, dried ginger powder & mix it.
▪︎Add desi ghee and add kamar kas (flame of the forest )and fry for 1 min and mix it well with semolina. Turn off the flame.
▪︎Add grinded fried nuts, raisins, puffed lotus seeds and mix until well combined.
▪︎Add jaggery powder and mix it well.
▪︎Gur ki panjiri is ready and store in an air tight jar & use up till 2 to 3 months.
