Gajar, Gobhi, Shaljam Ka Achar:-
Ingredients:
▪︎Carrots……………2  (1/2 inch Julienne cut)
(Gajar)
▪︎Turnip ……………2 (1/2 inch Julienne cut)
(Shaljam)
▪︎Cauliflower ……… 2 cups
(Phool Gobhi)

Achar Masala:
▪︎Mustard seeds…………..1 tbsp
(Rai dana / Sarson ke beech)
▪︎Fenugreek seeds…………..1 tsp
(Methi dana)
▪︎Cloves………5
(Laung)
▪︎Cumin seeds…….1 tsp
(Zeera)
▪︎Black peppercorn…….1 tsp
(Sabut kali mirch)
▪︎Salt……………1 tbsp
(Namak)
▪︎Turmeric powder………1 tsp
(Pissi haldi)
▪︎Red chilli powder……..1 tbsp
(Pissi lal mirch)
▪︎Vinegar………. 2 tbsp
(Sirka)
▪︎Mustard oil……..1/2 cup or as required
(Sarson ka tail)

Directions:
▪︎Wash carrots, turnip, cauliflower and pat dry completely & fully dried in sunlight .
▪︎In a pan, add fenugreek seeds, mustard seeds,
cumin seeds, cloves, black peppercorn and fry for 1 – 2 mins.
▪︎Let it cool and coarsely grind it.
▪︎In wok,add mustard oil, add grinded spices, salt, red chilli powder, turmeric powder & Fry for 1 – 2 mins.
▪︎Add vegetables and mix it.
▪︎Add vinegar and mix it well.
▪︎Turn off the flame & let it cool.
▪︎Add masala vegetables in a sterilized clean jar.
▪︎Keep for 2 – 3 days & keep mix after 2 days.
▪︎Always use a clean spoon.
▪︎Mix gajar, gobhi, shaljam ka achar is served with paratha, daal chawal etc.
