Kathiawari Cholay:-
Ingredients:
▪︎Chickpeas………….. 2 cups (boiled)
(Chane)
▪︎Water……….3 cups or as required
(Pani)
▪︎Salt…………1/2 tsp or as taste
(Namak)
▪︎Red chilli powder………..1/4 tsp
(Pissi lal mirch)
▪Red chilli flakes……….1/2 tsp
(Kuti lal mirch)
▪Turmeric powder ……………1/4 tsp
(Pissi haldi)
▪︎Sugar ……….1 tsp
(Cheeni)
▪︎Ketchup………2 tbsp
▪︎Tamarind pulp……. 4 tbsp or as taste
(Imli ki goda)
▪︎Water………1/4 cup
(Pani)
▪︎Corn flour…….1 & 1/2 tbsp
▪︎Potatoes ……….. 1 cup (cube cut & boiled )
(Alu)
▪︎Onion……….1 small sized  (Slices)
(Pyaz)
▪︎Green chillies……..2 – 3  (Chopped)
(Sabz mirch)
▪︎Tomatoes……….1/2 cup (Chopped)
(Tamatar)
▪︎Chaat masala………1 tsp
▪︎Fresh coriander ……… 4 tbsp (Chopped)
(Hara dhania)

▪︎Papri

Direction:
▪︎In a pan, add water & bring it to boil.
▪︎Add chickpeas, salt, red chilli powder,  red chilli flakes, turmeric powder, sugar, ketchup, tamarind sauce and mix it.
▪︎Add potatoes & cook for 2 – 3 mins.
▪︎Add corn flour slurry mix and mix it well.
▪︎Add onion, green chillies, fresh coriander, tomatoes, chaat masala and mix it.
▪︎Serve and top with papri.
▪︎Kathiawari Cholay is ready to eat.
