Chicken Changezi:-
Ingredients:
▪︎Chicken ………..1 kg
(Murghi)
▪︎Ginger garlic paste………….2 tbsp
(Lehsun adrak ka paste)
▪︎Lemon juice ……………. 2 tbsp
(Limu ka rus)
▪︎Salt…………..1 tsp
(Namak)
▪︎Kashmiri red chilli paste ……….1 tbsp
▪︎Cumin powder ………..1 tsp
(Pissa zeera)
▪︎Whole spices powder ……………1 tsp
(Pissa garam masala)
▪︎Chaat masala………1 & 1/2 tsp

Gravy:-
▪︎Oil ……………. 6 tbsp
(Tail)
▪︎Onion…………3 medium sized
(Pyaz)
▪︎Ginger garlic paste………….1 tbsp
(Lehsun adrak ka paste)
▪︎Tomatoes………..4 medium sized
(Tamatar)
▪︎Red chilli powder……….1 tsp
(Pissi lal mirch)
▪︎Kashmiri red chilli paste ……….1 tbsp
▪︎Coriander powder ……………2 tsp
(Pissa dhania)
▪︎Turmeric powder ……………1/2 tsp
(Pissi haldi)
▪︎Salt…………..1/2 tsp or as taste
(Namak)
▪︎Yogurt…………..1/2 cup
(Dahi)
▪︎Cream……………. 4 tbsp
▪︎Dried fenugreek leaves…………2 tsp
(Kasuri methi)
▪︎Water…………..1 cup or as required
(Pani)
▪︎Fresh coriander as required
(Taza dhania / Hara dhania)
▪︎Green chillies as required
(Sabz mirch)
▪︎Butter…….2 tbsp
(Makhan)

Direction:-
▪︎In a bowl, add chicken, yogurt, ginger garlic paste, kashmiri red chilli paste, chaat masala, cumin powder, salt, whole spices powder, lemon juice and mix it well. Marinate for 30 mins.
▪︎In a wok, add oil and marinated chicken and fry for 10 mins on medium flame from both sides until golden brown.
▪︎Turn off the flame & coal smoke for 5 – 7 mins. Set aside.
▪︎Add oil and onion & fry onion until translucent.
▪︎Add tomatoes and Cover it & cook for 5 mins on low flame until tomatoes soften
▪︎After tomatoes soften and turn off the flame.
▪︎Blend it well to make a smooth puree.
▪︎Add salt, red chilli powder, kashmiri red chilli paste, coriander powder, turmeric powder, ginger garlic paste, yogurt and mix it well.
▪︎Cover it & cook on low to medium flame for 15 mins.
▪︎Now add fried chicken, cream, dried fenugreek leaves & mix it well.
▪︎Add water and cover it & cook on low flame for 15 mins until oil separates.
▪︎Add butter and mix it.
▪︎Garnish with green chillies and fresh coriander.
▪︎Restaurant style chicken changezi is ready to eat and served with Naan.
